Japanese Cutting/Peeling Techniques
Hyoshigi-giri (sticks) / Tanzaku-giri (rectangles)
Hyoshigi-giri (sticks) is a technique of cutting into long and thin rectangles. The shape is similar to hyoshigi (wooden clappers), hence the name. Tanzaku-giri (rectangles) is a similar technique used for cutting into thin tanzaku (rectangles).


Hyoshigi-giri (sticks)
Cut into desired length and width pieces of even thickness.


Tanzaku-giri (rectangles)
Cut into desired length and width pieces as for hyoshigi-giri but thinner.
