Sogi-giri (shavings)

To make shavings of dense foods, such as the bottom of Chinese cabbage, shiitake mushrooms, and chicken, place the knife flat against the object and make thin slices by pulling the knife toward you, starting from the left (from the right for left-handed cooks). The increase in surface area created using this technique allows ingredients to be cooked evenly in a shorter time and absorb more flavor.
