How to Drain Tofu

The method of draining tofu varies depending on the dish being prepared. Microwaving, wrapping in cotton cloth, pressing with a weight and blanching in boiling water are the various methods.

Microwaving

Wrap the tofu in a paper towel, place on a microwavable dish and microwave. Cooking time will vary depending on the microwave. In general in a 600W microwave oven, 300 grams of tofu requires 2 to 3 minutes of cooking.

To slightly drain excess moisture, wrap tofu in a cotton cloth and let sit in a colander. To thoroughly drain excess moisture, wrap the tofu in a paper towel, place on a cutting board with one end of the board slightly raised and place a weight on the tofu. For aemono recipes such as shira-ae (tofu salad ), blanch the tofu in boiling water and drain in a colander.
