How to Prepare Konnyaku
Blanch konnyaku in boiling water and immerse in water before cooking to remove the smell of lime. To make aemono (dressed dishes) and itamemono (sautéed dishes), dry-fry the konnyaku to firm it up. The konnyaku will be crunchier and pick up flavors easier.
