Hoshi-shiitake (dried shiitake) / Wakame (seaweed)/ Harusame (vermicelli)
Dried shiitake and dried wakame are softened by soaking in water. Vermicelli are reconstituted by soaking in hot water.



Kiriboshi-daikon (dried Japanese white radish)
Rub with a small amount of water to remove dust. Separate the pieces and soak in water. Change the water once and continue soaking until the texture is 'al dente.' Squeeze out the excess water.
