How to Prepare Squid
For some dishes, it is not necessary to remove the skin.



Step 1
Grasp the head and tentacles of the squid in one hand and the body in the other. Pull off the head and tentacles and the guts together without breaking the ink sack, and remove the cuttlebone from the body. For the tentacles, separate the guts at the eyes and cuttlebone, and remove the small, hard beak by hand. Wash the body and tentacles carefully, and dry with paper towels.



Step 2
To peel the skin, remove the base at the back of triangular part (the empera), grasp the skin using a damp cloth and pull. For some dishes, it is not necessary to remove the skin.
