How to Remove Tendons from Sasami
Chicken sasami (tenderloins) have a tendon running through lengthwise. Remove this tendon to avoid shrinkage and an unpleasant texture. Place the sasami tendon side up and make shallow incisions on both sides of the tendon. Flip it over, hold the tip of the tendon and pull it out while pressing down on it with a knife.
