Otoshi-buta (dropped lid)
When cooking boiled dishes, a lid sitting directly on the food inside the pan is called otoshi-buta. This style allows the ingredients to become flavorful using only a small amount of soup and also prevents movement and breakage. When cooking ingredients that are easily broken, parchment paper can be used in place of otoshi-buta.
